BLT Pizza

  • 5 slices cooked turkey bacon
  • 2 chopped roma tomatoes
  • 1 cup lettuce
  • 1 chopped avocado
  • 6 oz. mozzarella cheese, shredded
  • whole what pizza dough
  • reduced fat ranch dressing

 

  1. Prepare dough according to package
  2. Top with cheese and turkey bacon.
  3. Bake in preheated 325F oven for 15 minutes  or until crust is golden brown 
  4. Cool on a wire rack for 2−3 minutes before cutting into wedges and serving.
  5. Top pizza with lettuce tomatoes, avocado, and a drizzle of ranch dressing.

Bar-b-que’d Tri-tip

  • 2 ½ pound beef tri tip
  • 2 tbsp garlic
  • 1 tbsp dried onion
  • 1 cup bar b que sauce ( low in sugar)
  • 1 tsp fresh ground black pepper

 Mix rub ingredients and hand rub ingredients on all surfaces of the tri tip. Preheat oven to 350. Wrap tri- tip in foil tight and place in oven. Cook for about an hour or until meat is soft.

Zucchini Lasagna

Ingredients

  • 2-3 medium zucchini , sliced 1/4 inch thick
  • 1 lb lean ground beef (96/4)
  • 1-2 Trader Joe’s Pomodoro Sauce 24 oz
  • Ricotta skim milk cheese
  • 3/4 cup mushrooms, chopped
  • 1/2  to 1 cup of  mozzarella cheese,  shredded
  • 1 cup of spinach
  • 1/4 of parmesan cheese (optional)

Directions

  • Cook meat in pan with olive oil until meat is brown and tender.  You may want to add an onion for flavor if desired.
  • Slice zucchini into long strips approx 1/2 of inch thick. Put zucchini in microwave to soften for approximately 1-2 minutes.
  • Preheat oven to eventually set at 350 degrees.
  • In rectangular baking-roasting pan, drizzle and spread olive oil to avoid zucchini sticking to pan.  Arrange one layer of soft zucchini in pan (vertical/horizontal but make sure layer is complete)
  • Spread and pat one layer of ricotta cheese on zucchini.
  • Follow with a layer of Pomodoro Sauce and lean beef .
  • Sprinkle parmesan cheese and a layer of mozzarella to follow.
  • Last, layer with spinach leaves.
  • Begin, next layer of zucchini and continue process.
  • Put in oven for approximately 45 minutes or until boiling.
  • Let sit for approximate 15 minutes to allow zucchini and cheeses to slightly harden.

Shrimp Quesadillas

2 tsp. olive oil
3 8-inch whole wheat tortillas
6 oz. raw shrimp, peeled and deveined
1/2 cup chopped bell pepper
1/2 cup chopped onion
1 cup shredded low-fat mozzarella cheese

*cooked shrimp can also be used

Heat 1 tsp. olive oil in a medium (10-inch) nonstick skillet over medium heat. Add bell pepper and onion cook for 10 minutes or until soft. Add Shrimp cook for about 2 minutes each side. When done mix bell pepper, onion, and shrimp with cheese and place on one side of tortilla,fold in half and place in pan cook about one minute on each side until cheese is melted.

Barbeque chicken pizza

Whole wheat pizza dough (I get mine from Trader Joe’s or Fresh and easy)

1 cup grilled chicken breast

1 1/2 cups shredded mozzarella cheese

1 cup barbeque sauce ( low in sugar)

1/2 cup grilled onions

Roll out pizza dough and top with barbeque sauce,  onions and chicken, top with cheese. Cook dough according to directions on package.

Chocolate chip pancakes

1 cup whole wheat flour
1/2 cup cup semi-sweet chocolate chips
2/3 cup oats
1 teaspoon vanilla
1 1/2 teaspoons baking powder
2 tablespoons brown sugar
1 teaspoon salt
2 egg whites

In a large bowl, combine the whole wheat flour, oats, baking powder, brown sugar,chocolate chips and salt.
Mix until the mixture has a sand-like consistency.
Make a well in the center of the flour-butter mixture, and add the eggs. Stir.Heat a pan over medium heat and grease surface with 1 tablespoon of butter or olive oil. Spoon the batter onto the surface to form 3-4 inch pancakes. Once bubbles form on the top of the pancakes, flip them over, and cook them on the other side for about 2 minutes each

Chicken strips

2 whole chicken breasts, deboned and cut into 1 1/2 inch strips
Panko bread crumbs
2 eggs, beaten
salt and pepper to taste

Dip chicken into beaten egg and then into panko bread crumbs to coat. .
Place cooked strips in baking dish. COVER and bake at 275 degrees for 30 minutes.

Ice cream

2 no sugar added fudgsicles
1 tbs better n peanut butter
1 tbs whipped cream

Melt fudgsicle and add in peanut butter and whipped cream,in a bowl mix all ingredients, freeze until ice cream hardens.

Not fried rice

1 cup cooked brown rice

1 cup frozen peas/carrots defrosted 

1/4 very finely chopped green onion 

1 tsp olive oil

3-4 cloves garlic finely chopped 

light  soy sauce to taste 

Low sugar teriyaki sauce for taste

2 beaten egg whites 

Crumbled cooked turkey bacon (optional)

in a large skillet use  olive oil to soften the onions and garlic,  move to the rice and add egg whites.  scramble until cooked, chop up in tiny pieces.  Add carrots/peas mix until warm.  add rice and saute until hot.  mix in teriyaki sauce and soy sauce.

Chicken tacos

  • 1 pound skinless, boneless chicken breast  cut into bite size pieces
  • 1 cup bell pepper chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 cup chopped lettuce
  • 1/2 teaspoon onion powder
  • 1/2 cup chopped tomatoes
  • light sour cream (optional)
  • guacamole (optional)
  • 1 package whole wheat tortillas
  • 2% shredded cheese

 

  1. In a large skillet over medium heat, combine chicken, bellpepper, olive oil, lime juice. Season with garlic powder, onion powder,. Simmer until chicken is no longer pink, and juices run clear, 15 to 20 minutes.
  2. Meanwhile, warm the tortillas in the oven or on the stove top until soft. When chicken is fully cooked, transfer to serving bowl. Place lettuce, tomatoes, cheese, guacamole, and sour cream in serving dishes. Each person can create their own tacos.
