French toast

3 slices Low sodium Ezekiel bread

3 eggs  beaten

1 teaspoon vanilla

1 teaspoon cinnamon

1 teaspoon stevia (optional)

Mix vanilla and cinnamon into beaten eggs, soak bread in egg mixture. In a skillet add bread cook until browned on both sides. Usually about 3 to 4 minutes each side. Makes 3 servings

Turkey scramble

Turkey Scramble

1 lb ground turkey

1/2 cup chopped onions

1/2 cup chopped mushrooms

1/2 cup chopped bell peppers

3 egg whites

season with garlic and cinnamon

salt optional.

In a pan cook bell pepper mushrooms and onions until soft. Mix in turkey and seasoning . Cook until turkey is no longer pink. Mix in egg whites, cook for 5 minutes or until egg whites are done.

Ham and cheese omelet

1/4 cup low fat cheese 
1/4 cup cubed ham or lean meat
2 large egg whites
About 2 teaspoons chopped fresh herbs of your choice*
Salt and ground black pepper to taste
 
Put the meat and cheese in a small nonstick skillet. Cook over medium heat until thoroughly warmed through, 2 to 3 minutes. In a bowl, beat the eggs with the herbs, salt, and pepper. Add the egg mixture to the skillet and stir briefly to lightly scramble. Cook without stirring for about 2 minutes more, until the eggs are softly set. Tilt the skillet away from you. With a spatula, fold half of the omelet over to enclose the filling. Cook for 30 seconds more, then slide the omelet onto a plate and serve.

Turkey meatloaf

1 tablespoon extra-virgin olive oil 
1 onion, chopped
1/tomato, chopped
1/2 green bell pepper, chopped
1 pound ground turkey breast
1/2 cup panko bread crumbs
1 cup  salsa
1 egg, beaten
3/4 teaspoon salt
1/2 teaspoon  black pepper
1  garlic minced

Preheat the oven to 350° F.

Heat the oil in a small skillet over medium heat. Add the onion and bell peppers and cook for 5 minutes, or until tender.

In a large bowl, mix, turkey, salsa, egg, salt, black pepper, and garlic. Mix in the vegetables and panko bread crumbs. Place the mixture in a baking dish and shape into a loaf.

Bake for 45 minutes or until done and the meat is no longer pink.
